• 10 Smart Eggs, hard boiled and peeled
  • ¼ Tsp. turmeric
  • 3 Tbsp. vegetable oil, divided
  • 1 Tsp. ground cumin
  • 1 Tbsp. curry powder
  • 1 Red onion, finely chopped
  • 1 Tbsp. grated ginger
  • 2 Cloves of garlic, minced
  • 1 Can diced tomatoes
  • 1 Tsp. ground coriander
  • ½ Tsp. red chilli powder
  • Salt (to taste)
  • 1 Cup of water
  • 1 Small bunch of cilantro, divided


Sprinkle turmeric on the Smart Eggs and rub until they are coated all over. In a large frying pan, heat 1 tablespoon of vegetable oil over medium high heat, add Smart Eggs and gently fry for 3 minutes until light brown. Remove from pan and set aside. Pour in the remaining 2 tablespoons of oil into the pan and reduce heat to medium. Add the cumin and curry powder for a minute then add onions, sauté for 2 minutes then add the garlic and ginger and cook for a minute more. Add tomatoes, red chilli powder, ground coriander and water, increase heat to high and bring sauce to a boil, simmer for about 10 minutes until slightly reduced and thicker then reduce heat to medium Lightly slit the Smart Eggs and add to sauce. Simmer for 5 minutes more, and then serve.
