INGREDIENTS

  • 6 Smart Eggs
  • 1 Tbsp. spoon honey mustard
  • 1½ Tsp. mayo
  • ½ Scotch bonnet, finely diced
  • 1 Tbsp. siracha or any other hot pepper sauce
  • ½ Tsp. Spanish paprika
  • 10 Thin slices of smoked marlin
  • Salt (to taste)
  • Pepper (to taste)

METHOD

Place Smart Eggs in a saucepan with a lid. Pour in water to cover and bring to a boil then remove from the heat. Cover and let stand for 10 to 12 minutes. Remove Smart Eggs from hot water, let cool and peel. Cut each Smart Egg in half lengthwise, remove the yolks, and place in a bowl with the mustard, mayonnaise, half of the paprika, hot pepper sauce, scotch bonnet and salt and pepper. Mash the yolks, and stir the mixture until smooth and thoroughly combined. Place half a slice of the smoked marlin in the empty yolk cavity. On top of the smoked marlin, fill each Smart Egg half with the deviled yolk mixture, using a spoon, piping bag, or a sturdy plastic bag with a corner cut off. Dust each Smart Egg with a pinch of paprika, and refrigerate until chilled, 20 to 30 minutes. Serve cold.
