Preheat a grill pan to medium-high heat and the oven to 425°F
Cut four 18” x 12” of foil and layout on a flat surface.
3. In a bowl, whisk together the barbecue sauce, sweetener, vinegar, chili powder, and smoked paprika. Brush sauce on both sides of the chicken, reserving enough for later. Sprinkle with half of the chopped parsley.
Cut whole chicken into quarters and season the chicken with salt, black pepper, soy sauce and olive oil
Place in a hot grill pan and grill on all sides (if no gill pan sear on all sides in a hot pan with a little oil)
Place chicken in the middle of each piece of foil and divide the potatoes, corn, peppers and onions evenly into each packet, arranging them around the chicken
In a bowl, whisk together the barbecue sauce, sweetener, vinegar, chili powder, and smoked paprika.

Fold the foil over the chicken and seal to close off the packets.
Place foil packets on a baking sheet and cook for 45 minutes to 1 hour. Remove baking sheet from oven. Brush chicken with reserved sauce and top with fresh parsley and serve immediately.
