Barbecue Chicken Foil Packets

Ingredients

For the Foil Packets:

  • 1 CB Whole Chicken (or 1 Tray Pack of Drumsticks)
  • Heavy duty foil
  • 1 tsp Himalayan sea salt
  • 1 tsp soy sauce
  • 1 tsp Black pepper to taste
  • ½ tbsp Olive oil
  • 2 chopped diced potatoes
  • 1 ear of corn sliced (optional)
  • ½ red bell pepper cut into chunks
  • ¼ red onion cut into small chunks
  • 2 tbsp chopped fresh parsley for garnish

For the Barbecue Sauce:

  • ½ cup cup barbecue sauce
  • 2 tbsp sweetener of your choice (honey, maple syrup, etc)
  • 1 tbsp apple cider vinegar
  • ½ tsp smoked paprika
  • ¼ tsp chili powder

Instructions

  • Preheat a grill pan to medium-high heat and the oven to 425°F
  • Cut four 18” x 12” of foil and layout on a flat surface.
  • 3. In a bowl, whisk together the barbecue sauce, sweetener, vinegar, chili powder, and smoked paprika. Brush sauce on both sides of the chicken, reserving enough for later. Sprinkle with half of the chopped parsley.
  • Cut whole chicken into quarters and season the chicken with salt, black pepper, soy sauce and olive oil
  • Place in a hot grill pan and grill on all sides (if no gill pan sear on all sides in a hot pan with a little oil)
  • Place chicken in the middle of each piece of foil and divide the potatoes, corn, peppers and onions evenly into each packet, arranging them around the chicken
  • In a bowl, whisk together the barbecue sauce, sweetener, vinegar, chili powder, and smoked paprika.
  • Brush sauce on both sides of the chicken, reserving enough for later. Sprinkle with half of the chopped parsley.
  • Fold the foil over the chicken and seal to close off the packets.
  • Place foil packets on a baking sheet and cook for 45 minutes to 1 hour. Remove baking sheet from oven. Brush chicken with reserved sauce and top with fresh parsley and serve immediately.
