1. Preheat the oven to 350 degrees
2. Wrap the ham completely in two to three layers of foil
3. Place in a baking dish half filled with water and warm in the oven; 10 minutes per pound
4. In a sauce pan, combine the passion fruit, juice and honey. Bring to boil
5. Once sauce starts to boil, immediately remove from the heat
6. Strain the liquid and pulp from the seeds, and then discard the seeds
7. Once the ham has warmed all the way through, peel away the skin and carve off some of the fat leaving an even layer of fat protecting the meat
8. Score the layer of fat to create a diamond pattern
9. Pour half of the passion fruit mixture all over the ham
10. Place the ham back in the oven uncovered at 470 degrees and roast until golden brown and crispy, the sauce will also caramelize. This should take approximately 15 to 20 minutes
11. In the last 10 minutes of browning, pour over the remaining passion fruit mixture and baste
12. Remove ham from the oven when golden and serve
