Serves: 4–6 persons

 

INGREDIENTS

  • Whole chicken
  • 1 tbsp Pepper flakes
  • 3 tbsp Sea salt
  • 2 sprigs Rosemary
  • ½ tap of each Red and green peppercorn
  • 1 tbsp Onion powder
  • 1 tbsp Garlic powder
  • 4 sprigs Thyme
  • 1 Scotch bonnet
  • 2 stalks Scallion
  • ¼ cup Olive oil

STEPS

  1. Make a spice rub with all the ingredients.
  2. Turn the bird breast side up and drizzle with olive oil.
  3. Generously rub all over the bird and under its skin.
  4. Bake on a tray at 350 degrees for an hour and a half.
