INGREDIENTS

  • ½ of a bird (cut in quarter inch pieces)
  • 3 tbsp Curry powder
  • 3 stalks scallion (chopped)
  • 1 onion (diced)
  • 3 garlic cloves (diced)
  • 1 ginger stalk (crushed)
  • 3 sprigs of thyme
  • 3 pimento seeds
  • 4 stalks of cilantro
  • 1 scotch bonnet pepper
  • 1 cup coconut cream
  • 2 cups Jasmine Rice
  • 2 tbsp Oil

STEPS

  1. Season chicken with salt, pepper and curry powder.
  2. Refrigerate for at least an hour.
  3. Over high heat, sear chicken in a little oil, brown on all sides.
  4. Add seasoning and cook until caramelized.
  5. Add coconut milk and simmer until thickened.
  6. Add salt and pepper to taste.
