In a blender or food processor, blend together a green seasoning of garlic, onion, scallion, thyme, ginger, water, and scotch bonnet.
Season the pork stew with half of the green seasoning blend along with the all-purpose seasoning, ground allspice, and black pepper.
Heat oil in a pan and add the curry powder, sauté until slightly brown and very fragrant.
Add the seasoned pork to the curry oil and stir continually to brown for about 5 mins. It will also spring natural juices.
Once it begins to cook, add 3 cups of water/broth, reduce the heat to medium-low, and cook until almost tender (about 45 mins to an hour).
Add the potatoes and carrots, along with 2 tablespoons more of the green seasoning. Taste for seasoning and if the liquid has evaporated too much add the remaining cup of water/broth.
Continue to cook until the meat and potatoes are fully cooked, and the sauce is thick and rich.
