Copperwood Pork Jamaican Curry Pork

Ingredients
- 1 pack Copperwood Pork Stew
- 4 cloves garlic
- 1 cup onion
- 3 scallion stalks
- 2 tbsp thyme leaves
- 2 tbsp ginger
- 1/4 cup water
- 1 scotch bonnet pepper
Other seasonings
- 3 tbsp all-purpose seasoning
- 1 tsp ground allspice
- 1/2 tsp black pepper
- 2 tbsps curry powder
- 4 tbsp oil
- 3-4 cups water/ broth
- 1 cup carrot
- 2 cup potato diced
Instructions
- In a blender or food processor, blend together a green seasoning of garlic, onion, scallion, thyme, ginger, water, and scotch bonnet.
- Season the pork stew with half of the green seasoning blend along with the all-purpose seasoning, ground allspice, and black pepper.
- Heat oil in a pan and add the curry powder, sauté until slightly brown and very fragrant.
- Add the seasoned pork to the curry oil and stir continually to brown for about 5 mins. It will also spring natural juices.
- Once it begins to cook, add 3 cups of water/broth, reduce the heat to medium-low, and cook until almost tender (about 45 mins to an hour).
- Add the potatoes and carrots, along with 2 tablespoons more of the green seasoning. Taste for seasoning and if the liquid has evaporated too much add the remaining cup of water/broth.
- Continue to cook until the meat and potatoes are fully cooked, and the sauce is thick and rich.
