In a food processor, combine the onion, scallions, scotch bonnet, garlic, pimento, thyme, nutmeg, and salt; process to a coarse paste, then add the oil and soy sauce.
Pour the marinade into a large, shallow dish, add the chicken, and turn to coat. Cover with plastic and let it sit and marinade for at least 2 hours or overnight in the fridge if possible.
Build a medium-hot fire in a charcoal grill or heat a gas grill to medium heat. (Alternatively, heat a cast-iron grill pan over medium-high heat.)
Add chicken, skin side down to cook, turning occasionally.
Cover grill and continue cooking until cooked through, about 35 to 40 mins. (Alternatively, transfer chicken to a foil-lined baking sheet; bake in a 350° oven until done
