PAN Chicken

Ingredients

  • 1 pack Likkle PAN
  • 1 large Onion chopped
  • 3 Scotch Bonnet Peppers stemmed and minced
  • 8 cloves Garlic minced
  • 3/4 cup Brown Sugar
  • 3/4 cup Pimento ground
  • 3/4 cup Scallions minced
  • 1/4 cup Vegetable oil
  • 1/4 cup Soy Sauce
  • 1/4 cup Ginger minced
  • 1 tbsp Thyme dried
  • 1 tsp Cinnamon ground
  • 1 tsp Nutmeg freshly grated
  • 1/2 tsp cloves ground
  • 1 tbsp Black Pepper
  • 2 tbsps Pimento ground
  • 1 tsp Salt

Instructions

  • In a food processor, combine the onion, scallions, scotch bonnet, garlic, pimento, thyme, nutmeg, and salt; process to a coarse paste, then add the oil and soy sauce.
  • Pour the marinade into a large, shallow dish, add the chicken, and turn to coat. Cover with plastic and let it sit and marinade for at least 2 hours or overnight in the fridge if possible.
  • Build a medium-hot fire in a charcoal grill or heat a gas grill to medium heat. (Alternatively, heat a cast-iron grill pan over medium-high heat.)
  • Add chicken, skin side down to cook, turning occasionally.
  • Cover grill and continue cooking until cooked through, about 35 to 40 mins. (Alternatively, transfer chicken to a foil-lined baking sheet; bake in a 350° oven until done
  • Serve with your choice of sides and enjoy!
