PAN Chicken

Ingredients
- 1 pack Likkle PAN
- 1 large Onion chopped
- 3 Scotch Bonnet Peppers stemmed and minced
- 8 cloves Garlic minced
- 3/4 cup Brown Sugar
- 3/4 cup Pimento ground
- 3/4 cup Scallions minced
- 1/4 cup Vegetable oil
- 1/4 cup Soy Sauce
- 1/4 cup Ginger minced
- 1 tbsp Thyme dried
- 1 tsp Cinnamon ground
- 1 tsp Nutmeg freshly grated
- 1/2 tsp cloves ground
- 1 tbsp Black Pepper
- 2 tbsps Pimento ground
- 1 tsp Salt
Instructions
- In a food processor, combine the onion, scallions, scotch bonnet, garlic, pimento, thyme, nutmeg, and salt; process to a coarse paste, then add the oil and soy sauce.
- Pour the marinade into a large, shallow dish, add the chicken, and turn to coat. Cover with plastic and let it sit and marinade for at least 2 hours or overnight in the fridge if possible.
- Build a medium-hot fire in a charcoal grill or heat a gas grill to medium heat. (Alternatively, heat a cast-iron grill pan over medium-high heat.)
- Add chicken, skin side down to cook, turning occasionally.
- Cover grill and continue cooking until cooked through, about 35 to 40 mins. (Alternatively, transfer chicken to a foil-lined baking sheet; bake in a 350° oven until done
- Serve with your choice of sides and enjoy!
