Corned Pork Run Down

Ingredients
- 1 Corned Pork Chub
- 1 tbsp Coconut Oil
- 1/2 cup Tomato chopped
- 1/2 cup Onion chopped
- 1/4 cup Sweet Pepper chopped
- 3 sprigs Thyme
- 2 cloves Garlic
- 1 tbsp Sugar
- 1/2 tsp Black Pepper
- 1 can Coconut Milk
Instructions
- Dice the corned pork into bite sized cubes.
- Heat the coconut oil in a pan and sauté the corned pork until golden brown and crispy.
- Add the tomatoes, onions, sweet peppers and garlic and allow the veggies to become tender
- Add the coconut milk, thyme, and sugar, stir and reduce the heat. Cover and allow this to cook until the sauce is thick and creamy.
- Serve with your favourite ground provisions. Enjoy!
