Corned Pork Run Down

Ingredients

  • 1 Corned Pork Chub
  • 1 tbsp Coconut Oil
  • 1/2 cup Tomato chopped
  • 1/2 cup Onion chopped
  • 1/4 cup Sweet Pepper chopped
  • 3 sprigs Thyme
  • 2 cloves Garlic
  • 1 tbsp Sugar
  • 1/2 tsp Black Pepper
  • 1 can Coconut Milk

Instructions

  • Dice the corned pork into bite sized cubes.
  • Heat the coconut oil in a pan and sauté the corned pork until golden brown and crispy.
  • Add the tomatoes, onions, sweet peppers and garlic and allow the veggies to become tender
  • Add the coconut milk, thyme, and sugar, stir and reduce the heat. Cover and allow this to cook until the sauce is thick and creamy.
  • Serve with your favourite ground provisions. Enjoy!
