Ingredients

Honey Garlic Drumsticks

  • 8 CB Chicken drumsticks
  • 1 tbsp olive oil
  • Salt & pepper to taste
  • ½ tsp garlic powder optional for milder flavour

Honey Garlic Sauce:

  • ¼ cup honey
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp ketchup
  • 1 tbsp brown sugar optional
  • 1 tsp minced garlic
  • 1 tsp cornstarch + 1 tbsp water optional, to thicken

Chicken Chub Ham Pinwheel Wraps

  • 4 slices Caribbean Passion Chicken Chub Ham seared
  • 4 strips Caribbean Passion Bacon cooked until just crisp
  • 2 large flour tortilla wraps plain or flavoured
  • ¼ cup cream cheese softened
  • 1 tsp honey mustard
  • ¼ cup shredded cheddar or mozzarella
  • ½ cup shredded lettuce or spinach
  • ¼ cup julienned bell peppers red/yellow
  • 2 tbsp grated carrots optional
  • Fresh thyme or chopped parsley

Chicken Sausage Mac & Cheese

  • 3 Caribbean Passion Chicken sausages
  • 1 tbsp coconut oil
  • ½ cup sweet pepper slices
  • ¼ cup onion sliced
  • 2 garlic cloves shredded
  • 1 tsp honey
  • 2 cup dry macaroni
  • 1 tbsp salt
  • 3 tbsp butter
  • 2 tbsp flour
  • 2 cup cheddar cheese
  • 2 cups milk
  • 2 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and black pepper to taste

Instructions

Honey Garlic Drumsticks

  • Pat drumsticks dry, rub with oil, and season with salt, pepper, and garlic powder.
  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper
  • Place drumsticks on baking sheet and bake for 25 minutes, turning once halfway.
  • While the drumsticks are baking, In a small saucepan, combine honey,soy sauce, ketchup, brown sugar, and garlic. Simmer 3–5 minutes untilslightly thick. If thicker sauce is desired, stir in cornstarch slurry and simmer for another 2 minutes.
  • Remove drumsticks, brush generously with sauce. Return to oven for 10–15 minutes or until golden and sticky. Internal temp should be 165°F.
  • Let the chicken rest for a few minutes so the glaze sets.

Chicken Chub Ham Pinwheel Wraps

  • In a skillet over medium heat, cook bacon strips until just crisp but still pliable (about5–6 minutes). Drain on paper towels.
  • Lightly sear ¼-inch-thick slices of Caribbean Passion Chicken Chub Ham in a skillet with a bit of oil over medium-high heat for 1–2 minutes per side, just until lightly golden. Let cool.
  • Lay a tortilla flat on a clean surface. Spread a layer of cream cheese evenly over the surface. Add a swipe of mustard if using.
  • Place 2 slices of seared chicken chub ham horizontally across the center. Top with 2 cooked bacon strips, cheese slices, shredded lettuce thinly sliced bell peppers, and carrots. Sprinkle chopped fresh herbs if desired.
  • Roll the tortilla up tightly (like a burrito), ensuring bacon and fillings stay aligned. Place seam-side down and chill for 10–15 minutes to firm up.
  • Use a sharp knife to cut into 1-inch pinwheels (you’ll get 6–8 pieces per wrap). Serve as is or secure with toothpicks for lunch kits or party platters

Tips

  • Crisp but bendable bacon: Don’t overcook the bacon — aim for just-crisp so it stays pliable for rolling.
  • Colour boost: Use spinach wraps or sun-dried tomato wraps for visual variety.
  • Add sweetness: Try a thin layer of guava jelly or pineapple jam under the creamcheese for a Caribbean twist.

Chicken Sausage Mac & Cheese

  • Slice sausages into bite sized pieces.
  • Slice the onions and peppers, and shred the garlic.
  • In a frying pan, heat the oil then add peppers, onions and sausage. Sauté together until the veggies are soft and the sausage is browned.
  • Remove from the heat and stir in the shredded garlic and honey and set aside.
  • Bring a pot of water to boil and add a tbsp of salt and cook the macaroni until al-dente.
  • Strain the pasta, remove from pot and set aside. In the same pot, melt the butter and add the flour.
  • After flour is dissolved, add the milk, onion powder and paprika, and bring to a boil.
  • Allow the milk to slightly thicken, then turn off the heat and add the cheese.
  • Season to taste with black pepper and salt.
  • Once the cheese melts, add the macaroni, sautéed sausage and peppers.
  • Stir to combine then serve hot.
