Papaya BBQ Grilled Chicken

Ingredients
- 1 CB Chicken Likkle PAN Pack legs, thighs, or quarters
- Salt and black pepper to taste
- 1 tbsp all-purpose seasoning or green seasoning
- 1 tsp paprika for colour
For the Papaya BBQ Glaze:
- 1 cup ripe papaya peeled, seeded & blended until smooth
- ½ cup ketchup
- 2 tbsp. brown sugar or honey
- 2 tbsp. apple cider vinegar or lime juice
- 1 tbsp. soy sauce
- 1 tsp. grated fresh ginger
- 1 tsp. minced garlic
- ½ scotch bonnet pepper finely chopped
- ½ tsp pimento allspice
- Pinch of salt to taste
Instructions
- Pat chicken dry and season with salt, pepper, paprika, and all-purpose seasoning. Marinate 30 minutes (or overnight).
- In a saucepan, simmer papaya BBQ glaze ingredients 10–15 minutes until slightly thickened. Blend if desired. Reserve some for basting.
- Heat grill and sear chicken 2–3 minutes per side over direct heat.
- Move chicken to indirect heat, cover, and cook 30-35 minutes, turning occasionally.
- During the last 10–15 minutes, baste with glaze and flip until coated and caramelized.
- Cook until internal temperature reaches 165°F.
- Serve with extra sauce and preferred sides.
