Bad Dawg Toppers

Ingredients
Avocado Salsa
- 1-8 pack of Bad Dawg Sausages
- 1 cup chopped red onion
- 3 medium avocados, semi-firm but ripe
- 3 tbsp olive oil
- 3 tbsp fresh lime juice
- 1 clove garlic, finely minced
- 1/2 tsp salt (to taste)
- 1/4 tsp freshly ground black pepper
- 1/2 cup loosely packed cilantro leaves, chopped
Mango Salsa
- 3 ripe mangos, diced
- 1 medium red bell pepper, chopped
- ½ cup chopped red onion
- ¼ cup packed fresh cilantro leaves, chopped
- 1 large lime, juiced
- ¼ cup lime juice
Caramelized Onions and Bacon Bits
- 1 pack Caribbean Passion Streaky Bacon
- 2 tbsp olive oil
- 3 large onions sliced
- pinch of salt
Instructions
Avocado Salsa
- In a mixing bowl, add chopped red onions, diced tomatoes and avocados.
- In a separate small mixing bowl whisk together olive oil, lime juice, garlic, salt and pepper until mixture is well blended. Pour mixture over avocado mixture, add cilantro then gently toss mixture to evenly coat.
Mango Salsa
- In a medium mixing bowl toss together all ingredients.
- Season with salt to taste
Caramelized Onions and Bacon Bits
- Thinly slice the onions about 1/8-inch thick. In a soup pot, heat the oil over medium high heat. Add the onions and sauté for 8 to 10 minutes, stirring often, until very soft and just starting to become light brown on the bottom layer.
- Reduce to medium-low heat and stir in the salt. Cook for 40 to 45 minutes, stirring every 5 to 10 minutes and adjusting the heat so they cook slowly without burning. The onions will change from raw to golden to light brown to very dark brown. Remove and set aside
- Cook the bacon over medium heat, turning occasionally, until cooked. Crumble bacon into bits.
For the Bad Dawgs
- You can prepare the sausages in the oven or stovetop. If using stovetop, heat a large skillet if using oven, you will need a sheet pan and set the oven to 350 degrees.
- Make a split down the middle of each sausage, not slicing all the way through, just enough to be able to open and stuff with the toppings.
- Place the sausages in a baking tray and bake, turning occasionally. Or if using stove top, place the sausages in the warmed skillet in batches and heat through just until the colour begins to change. Heat or sauté the Bad Dawgs for about 10 minutes turning frequently.
