Grilled Pork Chops with Charred Veggies

Ingredients

Pork

  • 8 Copperwood Pork chops
  • 1/2 cup Olive oil
  • Small handful fresh Parsley
  • 1/2 tsp Pimento
  • 6 cloves Garlic
  • 4 stalks Scallion
  • 4 sprigs Thyme
  • Small handful Fresh cilantro
  • 1 tsp Pepper jelly
  • 1 tsp Paprika
  • 1 tsp Onion powder
  • 1 tbsp Mushroom soy sauce
  • 1 tbsp Balsamic vinegar
  • 1 tbsp Dijon mustard 1 tsp Salt Freshly cracked Pepper 10 garlic cloves
  • 1 tsp Salt
  • Freshly cracked Pepper

Vegetable

  • 3 peeled and sliced Carrots
  • 1/2 head Cabbage
  • 1 sliced Zucchini
  • 1 sliced Red bell pepper
  • 2 tbsp Balsamic Vinegar
  • 1.5 tbsp Olive oil + extra For sautéing
  • Salt to taste
  • Freshly cracked black Pepper

Instructions

  • Pulse all pork marinade ingredients in food processor until well combined
  • Marinate chops for 10 mins.
  • Grill chops for 4 minutes on each side on medium high heat
  • When finished with the pork, lightly salt sliced zucchini on each side to release moisture. Set aside.
  • Sauté the vegetables in batches on medium high heat with some olive oil until they are slightly charred. Set each batch aside in a bowl as they finish cooking.
  • Add the cooked veggies back to the pan with the olive oil, balsamic vinegar, salt, and pepper and mix well
  • Pat the zucchini slices dry, sprinkle with black pepper, and grill on medium high heat for about 2-3 minutes on each side
