Grilled Pork Chops with Charred Veggies

Ingredients
Pork
- 8 Copperwood Pork chops
- 1/2 cup Olive oil
- Small handful fresh Parsley
- 1/2 tsp Pimento
- 6 cloves Garlic
- 4 stalks Scallion
- 4 sprigs Thyme
- Small handful Fresh cilantro
- 1 tsp Pepper jelly
- 1 tsp Paprika
- 1 tsp Onion powder
- 1 tbsp Mushroom soy sauce
- 1 tbsp Balsamic vinegar
- 1 tbsp Dijon mustard 1 tsp Salt Freshly cracked Pepper 10 garlic cloves
- 1 tsp Salt
- Freshly cracked Pepper
Vegetable
- 3 peeled and sliced Carrots
- 1/2 head Cabbage
- 1 sliced Zucchini
- 1 sliced Red bell pepper
- 2 tbsp Balsamic Vinegar
- 1.5 tbsp Olive oil + extra For sautéing
- Salt to taste
- Freshly cracked black Pepper
Instructions
- Pulse all pork marinade ingredients in food processor until well combined
- Marinate chops for 10 mins.
- Grill chops for 4 minutes on each side on medium high heat
- When finished with the pork, lightly salt sliced zucchini on each side to release moisture. Set aside.
- Sauté the vegetables in batches on medium high heat with some olive oil until they are slightly charred. Set each batch aside in a bowl as they finish cooking.
- Add the cooked veggies back to the pan with the olive oil, balsamic vinegar, salt, and pepper and mix well
- Pat the zucchini slices dry, sprinkle with black pepper, and grill on medium high heat for about 2-3 minutes on each side
