Mediterranean Chicken Salad

Ingredients

Chicken

  • 1 Pack CB Breast Fillet
  • 1/4 cup Olive oil
  • 1/4 cup Greek yogurt
  • 2 juiced Lemons
  • 2 tbsp Dijon mustard
  • 1 tsp Smoked paprika
  • 1/2 tsp Red pepper flakes
  • 6 cloves Garlic (minced)
  • t tsp Dried oregano (minced)
  • 1 handful Fresh parsley, chopped
  • 1 tsp Salt
  • Freshly cracked black pepper

Salad

  • 2 heads Romaine, sliced
  • 2 cup Chopped tomatoes
  • 2 cup Diced cucumber
  • 1 Red onion, diced
  • 1/2 cup Pitted black olives, halved
  • 3/4 cup Crumbled feta cheese
  • 1 1/2 cup Chickpeas

Dressing

  • 1/2 cup Olive oil
  • 2 tbsp Greek yogurt
  • 4 tbsp Red wine vinegar
  • 1 Lemon, juiced
  • 1 handful fresh parsley and fresh mint, chopped
  • 1 tbsp Honey
  • 1 tsp Salt
  • Freshly cracked black pepper

Instructions

  • Marinate chicken overnight. When ready to grill chicken, preheat grill or grill pan to medium high heat and grill on each side for 5 minutes.
  • Set aside and let cool while you assemble the salad and make the dressing. Toss the salad. Slice the chicken and serve.
