Mediterranean Chicken Salad

Ingredients
Chicken
- 1 Pack CB Breast Fillet
- 1/4 cup Olive oil
- 1/4 cup Greek yogurt
- 2 juiced Lemons
- 2 tbsp Dijon mustard
- 1 tsp Smoked paprika
- 1/2 tsp Red pepper flakes
- 6 cloves Garlic (minced)
- t tsp Dried oregano (minced)
- 1 handful Fresh parsley, chopped
- 1 tsp Salt
- Freshly cracked black pepper
Salad
- 2 heads Romaine, sliced
- 2 cup Chopped tomatoes
- 2 cup Diced cucumber
- 1 Red onion, diced
- 1/2 cup Pitted black olives, halved
- 3/4 cup Crumbled feta cheese
- 1 1/2 cup Chickpeas
Dressing
- 1/2 cup Olive oil
- 2 tbsp Greek yogurt
- 4 tbsp Red wine vinegar
- 1 Lemon, juiced
- 1 handful fresh parsley and fresh mint, chopped
- 1 tbsp Honey
- 1 tsp Salt
- Freshly cracked black pepper
Instructions
- Marinate chicken overnight. When ready to grill chicken, preheat grill or grill pan to medium high heat and grill on each side for 5 minutes.
- Set aside and let cool while you assemble the salad and make the dressing. Toss the salad. Slice the chicken and serve.
