Grilled Pineapple Ginger Chicken

Ingredients
- 1 pack CB Chicken Mixed Parts
- 2 - 3 multicolored bell peppers, halved
- 6 pineapple slices
- 2 tbsp oil
Seasoning Blend
- 1/4 tsp cayenne pepper
- 1 tbsp salt
- 1 tsp black pepper
- 2 tbsp sugar
- 1 tbsp onion powder
- 1 tbsp dried parsely
- 1 tbsp smoked paprika
For Pineapple Ginger Sauce
- 8 oz pineapple
- 1/4 cup vinegar
- 1/4 cup soy sauce
- 1 cup honey
- 2 tbsp brown sugar
- 2 tbsp sesame oil
- 2 inch piece of ginger
- 2 tbsp tomato paste
Instructions
- In a bowl combine all the ingredients for the seasoning blend
- Lay out the chicken parts cleaned and dry along with the peppers and pineapple season with the seasoning blend and oil and set aside to marinate for an hour
- Heat a grill and place the chicken, pineapple and peppers on the grill cooking the veggies for 10 minutes and the chicken for 20 minutes, turning to ensure even grilling
- In a blender blend together all the sauce ingredients
- Preheat the oven to 350 degrees
- You can reserve the grilled peppers and pineapples to serve alongside the chicken at the end or, for added flavor, place the peppers and pineapples at the bottom of a baking dish with the grilled chicken on top.
- Pour the sauce over everything, cover and place in the oven for 30-40 minutes.
- Remove the cover and turn the oven to the broiling setting, broiling on both sides, until the sauce is thick and the chicken is sticky and golden
- Serve and Garnish with scallion greens
